16 ounces boneless skin-on chicken thighs
6 ounces cucumber (sliced)
4 ounces cherry tomato (halved)
2 ounces romaine (roughly chopped)
1 ounce red cabbage (shredded)

2 3/4 cups cooked basmati rice (from 1 cup rice)
1 tablespoon garlic (minced)
1 teaspoon cajun seasoning
1 teaspoon paprika
1/2 teaspoon ground ginger
1/2 teaspoon cardamom
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/2 teaspoon lemon juice
1/4 teaspoon cinnamon
1/4 tablespoon cumin
1/4 teaspoon nutmeg
1/4 teaspoon chili powder
2 tablespoons plain greek yogurt
2 tablespoons japanese mayonnaise
2 tablespoons coriander (julienned)
Directions
Season 16 oz boneless chicken thighs with 1 tbsp garlic, 1 tsp Cajun, 1 tsp paprika, 1/2 tsp ground ginger, 1/2 tsp cardamom, 1/2 tsp black pepper, 1/2 tsp ground coriander, 1/2 tsp salt, 1/2 tsp lemon juice, 1/4 tsp cinnamon, 1/4 tsp cumin, 1/4 tsp nutmeg, and 1/4 tsp chili powder. Set aside to marinate for about 5 minutes.
Air-fry at 400°F for 17 minutes.
Meanwhile, make the drizzling sauce by combining 2 tbsp Greek yogurt, 2 tbsp Japanese mayo, and 2 tbsp finely chopped coriander.
