Baking salmon in foil results in a delicious and satisfying meal.
Ingredients
1 salmon fillet (about 2 pounds)
2 tablespoons butter, melted
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 tablespoon minced fresh parsley
3/4 teaspoon salt
1/4 teaspoon pepper
6 lemon slices
Directions
Preheat oven to 350°. Line a 15x10x1-in. baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Combine butter, garlic and lemon zest; drizzle over salmon. Sprinkle with parsley, salt and pepper. Top with lemon slices. Fold foil around salmon; seal tightly.
Bake for 20 minutes. Open foil carefully, allowing steam to escape. Broil 4-6 in. from heat until fish flakes easily with a fork, 3-5 minutes.
