This Cajun mac and cheese recipe is the perfect combination of creamy, cheesy goodness, smoky sausage and a touch of heat. It's a fun twist on a comfort food classic.
Ingredients
1 pound uncooked elbow macaroni
6 tablespoons butter
4 fully cooked andouille sausage links, sliced
1 cup chopped onion
1 cup chopped sweet red pepper
3 garlic cloves, minced
1/4 cup all-purpose flour
3 cups whole milk
1-1/2 cups shredded sharp cheddar cheese
1 cup shredded pepper jack cheese
1/2 cup shredded parmesan cheese
2 teaspoons cajun seasoning
1 teaspoon salt
1/2 teaspoon pepper
Directions
Preheat oven to 400°. Cook macaroni according to package directions. Drain; set aside.
In a large sauce pan, melt butter over medium heat. Add sausage; cook until browned, 1-2 minutes per side. Remove; set aside.
In the same pan, add onion and bell pepper; cook until tender, 4-5 minutes. Add garlic; cook 1 minute longer. Sprinkle with flour until well combined. Gradually add in milk; cook until thickened, 3-4 minutes, stirring occasionally. Add shredded cheeses, Cajun seasoning, salt and pepper until cheese has melted. Stir in cooked macaroni and sausage.
Transfer mixture to a greased 13x9-in. baking dish. Bake until cheese is bubbly and edges are golden brown, 20-25 minutes.
