A colorful mix of seasonal vegetables—zucchini, bell peppers, mushrooms, and onions—tossed with herbs and olive oil, then grilled until lightly charred. A healthy, flavorful side for any grilled entrée.
Ingredients
1 1/2 lb mixed vegetables 3 t olive oil
1 t basil,chopped
1 t thyme,chopped 1/2 t onion powder
1/4 t pepper 1/8 t mustard 1/8 t paprika
1 garlic clove,minced
Directions
If using potatoes, halve and cook, covered, in a small amount of boiling water for about 10 minutes. Drain. Prepare other veggies as needed. Prepare seasoning mixture and brush on prepared vegetables.
Preheat gas grill. Place vegetables on a piece of heavy foil or on grill rack. Cover and grill until tender. Turn occasionally and brush with seasoned mixture.
