Mississippi Mud Potatoes
These Mississippi mud potatoes are just as delicious as a loaded baked potato, but with the convenience of baking everything together.
Ingredients
- 2 1/2 cups diced potatoes
- 3/4 cup shredded cheddar cheese
- 1/2 cup crumbled cooked bacon
- 1/2 cup diced onion
- 1/3 cup mayonnaise
- 2 garlic cloves, pressed
- salt and freshly ground black pepper to taste
- 1/4 cup chopped green onions
Directions
- Preheat the oven to 325 degrees F (165 degrees C). Spray an 8x8-inch baking dish with nonstick cooking spray. Set aside.
- Combine potatoes, cheese, bacon, onion, mayonnaise, garlic, salt, and pepper in a large bowl. Transfer to the prepared dish.
- Bake until potatoes are fork tender, about 1 1/2 hours. Top with green onions.
