Ingredients
1/3 cup apricot preserves
1/4 cup chili sauce
1 tablespoon hot mustard
1/4 teaspoon salt
1/8 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
Directions
Preheat broiler. In a small saucepan, combine the first 5 ingredients; cook and stir over medium heat until heated through.
Place chicken in a 15x10x1-in. baking pan coated with cooking spray. Broil 3-4 in. from heat until a thermometer reads 165°, 6-8 minutes on each side. Brush occasionally with preserves mixture during the last 5 minutes of cooking.
