This recipe is pretty much vegan to begin with, except butter. Use vegan butter instead of the real deal and you’re good to go.
Ingredients
4 cups sliced fresh strawberries
1/4 cup sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 cup old-fashioned oats
3/4 cup all-purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup butter, melted
vanilla ice cream, optional
Directions
Preheat oven to 375°. In a large bowl, combine strawberries, sugar, cornstarch and vanilla. Transfer to a greased 11x7-in. baking dish. In a large bowl, combine oats, flour, sugar, brown sugar, cinnamon and salt; stir in butter. Sprinkle over berries.
Bake until filling is bubbly and topping is lightly browned, 30-35 minutes. Serve warm with ice cream, if desired.
