To ensure they cook evenly, slice the apples as uniformly as possible; about a quarter-inch thickness is ideal. We call for peeled apples to give the fruit a softer consistency once cooked.

5 medium tart apples, peeled and sliced
1/2 cup coconut sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 cup all-purpose flour
3/4 cup coconut sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup cold vegan butter-style sticks, cubed
Directions
Preheat oven to 375°. In a large bowl, combine apples, coconut sugar, flour, lemon juice and cinnamon. Transfer to a greased 11x7-in. baking dish. In a small bowl, combine flour, coconut sugar, salt and cinnamon; cut in vegan butter until crumbly; sprinkle over apples.
Bake until apples are tender and topping is golden brown, 45-50 minutes. Serve warm.
