I adore fresh watermelon in summer. Its colorful juicy nature just screams summertime to me. A triangle of the sweet summer fruit makes me think of times at the end of the school year as much as times at the beach on summer break. This watermelon feta salad takes me to those memories.
Ingredients
2 cups fresh watermelon , cubed
½ cup blueberries
4 ounces feta cheese , cubed or crumbled
½ cup cucumber , chopped
4 cups arugula
¼ cup olive oil
1 tablespoon fresh lime juice
1 tablespoon white vinegar
2 tablespoons honey
½ teaspoon garlic , minced
¼ teaspoon coarse kosher salt
¼ teaspoon ground black pepper
1 tablespoon fresh mint , chopped
Directions
In a large serving bowl, platter, or other preferred vessel, layer or arrange the watermelon, blueberries, feta, cucumber, and arugula as desired.
Place the dressing ingredients into a jar or other container with a lid and shake vigorously to combine.
Pour the dressing over the salad and toss together, or serve on the side.
